Russian honey cake is familiar to everybody in our country. In our memory, it is strongly associated with the taste of honey, the flavor of condensed milk or any other homemade cream. Homemade dishes including homemade desserts always remind us our family and childhood.

Historically, this dessert was created more than one millennium ago. The beginning of its history was laid back in Ancient Rome, when housewives baked the simplest flat cakes, adding wild honey into the pastry. At that time, it was already considered a delicious dessert, which could be served up in wealthy citizens’ houses. In the course of time, in fact, with the development of cooking, people began adding various fruits, raisins, vegetables, etc. to these dishes.

After Rome, this dish was developed in European countries, where it appeared for the first time in medieval Germany, specifically in those governmental entities that existed on the territory of its modern state. Only monks, as it was supposed at that time, could have a recipe. They also baked this incredible cake for themselves as well as for other dignitaries. Surely, this dish was not available for ordinary people of that time, so it was not baked at home.

Over time, this dish came from Germany to other countries. I would like to describe the process of its cooking in France. France has always been distinguished by its exquisite manners, culinary masterpieces and a sense of taste. This homemade dessert attracted attention of local chefs and cooks. French farmers were famous for their honey, and farmworkers could always gather the necessary amount of wild honey for local nobles’ table.

All this served as the basis for the development of this dessert to a new quality level. France was notable for its decentralization and lack of any standards. For this reason, each confectionery, every establishment of that period, specializing in cooking, changed the recipe of the honey cake and added different ingredients. Thereby nuts, dried apricots, various kinds of chocolate, etc. appeared in the recipes of the cake.

Honey cake is well known in the territory of Russia for a long time. Our ancestors baked it approximately on the same principles as our Western friends. However, they cooked a special homemade cream with milk.
