Есть устойчивое мнение, что данный десерт пришел к нам из очень далекого прошлого. Якобы еще в Древнем Риме об этом десерте отзывались как о ласковом ветре, который ласкает вкус, как женщина. Но при этом точных сведений, что именно повара и кулинары Древнего Рима изготовили этот десерт, стояли у истоков собственно очень сложного рецепта этого необычного домашнего блюда, в исторических документах не сохранилось. Более того, российские ученые, специализирующие на исторических проблемах, связанных с бытом наших предков, считают, что такой десерт как зефир – это результат творчества славянских кулинаров далекого прошлого с таким блюдом как пастила. Обосновывают это они очень просто.

Так, еще в 14 веке в исторических документах упоминается такое домашнее блюдо и десерт как пастила. Точного рецепта время для нас не сохранило, но известно, что пастила готовилась, в том числе, из дикого меда, яблок. Спустя каких-то сто лет, домашние хозяйки захотели сделать свой десерт не только вкусным, но и красивым. Очевидно, опытным путем они пришли к тому, что помочь им в этом может яичный белок, благодаря которому они избавились от некрасивого красноватого оттенка, который придавали пастиле яблоки. А уже благодаря цивилизации, а также желанию упростить изготовление этого десерта, в 19 веке от меда в изготовлении пастилы отказываются, начинают применять сахар. В этот момент пастила практически полностью превратилась в наш современный зефир. И помогли ему в этом французские кулинары, которые перед добавлением белка начали его взбивать. Это сразу изменило содержание и форму пастилы, она превратилась в зефир.

Хочется сказать, что, обращаясь к домашнему кулинару за приобретением такого необычного и вкусного десерта, надо выяснять, на чем именно готовится зефир. Из нашего описания уже ясно, что его можно готовить, по сути, с использованием любых фруктов, в том числе, и в классическом виде с использованием яблок. Но также можно добавлять лимон, вишню, рябину и другие наименования фруктов для создания самого удивительного вкуса!

There is a firm opinion that this dessert came to us from a very distant past. Supposedly, ancient Romans described this dessert as a gentle wind that caressed the taste, like a woman. However, at the same time, there is no exact information in historical documents that it was cooks and culinary specialists of Ancient Rome who created this dessert, invented a very complex recipe of this unusual homemade dish.

However, Russian scientists studying historical problems especially our ancestors’ way of life believe that the marshmallow was a result of the Slavic cooks’ creativity with fruit paste long ago. They easily prove their point of view.

So, it is mentioned in historical documents that the fruit paste has been a homemade dish and dessert since 14th century. The exact recipe is lost for us, but it is known that the fruit paste was cooked of wild honey and apples. After some hundred years, housewives wanted to make their dessert not only tasty, but also beautiful. Obviously, by experience they concluded that egg white could help them with this, thanks to what they got rid of the ugly reddish shade that apples gave. In the 19 century they stopped putting honey into the fruit paste and began using sugar to simplify the preparation of this dessert. At that moment, the fruit paste almost completely turned into our modern marshmallow. French cooks made a valuable contribution to the development of marshmallow because they decided to whip egg white before adding it, what immediately changed its content and form, the fruit paste turned into marshmallow.

I should say that when you want to buy this unusual and delicious dessert from a home cookery expert it is better to find out which ingredients the cook uses. It is already clear from our description that, in fact, it can be cooked of any fruit, including the classical recipe with apples. You can also add lemon, cherry, ashberry and other fruits to create the most amazing taste!

Existe una firme opinión de que este postre nos llegó del pasado muy remoto. Supuestamente en la Antigua Roma, lo describían como el viento suave que acariciaba el sabor, como una mujer. Pero al mismo tiempo, en los documentos históricos no hay ninguna información precisa de que fueron los cocineros y los especialistas culinarios de la Antigua Roma quienes hicieron este postre, crearon una receta muy compleja de este plato casero especial. Además, los científicos rusos quienes estudian los problemas históricos relacionados con la forma de vida de nuestros antepasados, creen que un postre como el malvavisco es el resultado de la creatividad de los especialistas culinarios eslavos del pasado remoto con un plato como pasta de fruta. Lo argumentan de manera muy sencilla.

En los documentos históricos podemos encontrar la información que aún en el siglo XIV existía un plato casero y un postre como pasta de fruta. La receta exacta no fue guardada para nosotros, pero se sabe que la pasta de fruta se preparaba con miel silvestre y manzanas. Después de unos cien años, las amas de casa querían hacer su postre no sólo sabroso, sino también bonito. Obviamente, por experiencia entendieron como solucionar el problema: había que añadir la clara de huevo al postre para eliminar la sombra rojiza y fea que daban manzanas a pasta de frutas. Después en el siglo XIX para simplificar la producción de este postre, decidieron dejar de usar miel y sustituirla por azúcar. En este momento, la pasta de fruta se convirtió casi por completo en nuestro moderno malvavisco. Los maestros de cocina franceses hicieron una contribución importante, decidieron batir la clara de huevo antes añadirla. Esto cambió el contenido y la forma de la pasta de fruta inmediatamente, se convirtió en el malvavisco.

Es preciso que diga que, cuando me dirijo a un cocinero casero para comprar el postre especial y sabroso, siempre averiguo como se cocina el malvavisco. Según nuestra descripción, ya está claro que se puede cocinar, de hecho, usando cualquiera fruta, incluso, en forma clásica con manzanas. ¡Pero también se puedes añadir limón, cereza, bayas de serba y otras frutas para crear el sabor más sorprendente!
