Crescenza or Stracchino is a type of Italian cow’s-milk cheese, which has a very soft, creamy texture and normally a mild and delicate flavour. It was created in Lombardy. It is considered that such a strange name originated from the Lombardian phrase that literally means ”very tired”. Legends that have come to us, tell us that cows which pastured in alpine meadows, came back home very tired and gave a small amount of milk. For this reason, the composition of their milk changed, which also had an influence on the taste of cheese. Such cheese had a special flavour, it was a little bitter.

It is very difficult for local farmers to provide appropriate feed for cows in Alpine pastures, guarantee long passes, do this on a day-to-day basis. A lot of factories have learned to make milk faster, easier and, as mentioned above, supposedly more effective. But in fact, the quality of dairy products and all the products in general is falling, and mankind can lose a unique type of natural cheese.
