So, the higher in the mountains there are the settlements, the poorer and "easier" the farm and the recipes of dishes are. On the contrary, in the center of the country the choice of food is great, varied. Also there work many expensive restaurants; there is a wide choice of agricultural products in stores: potatoes, peppers, yams, garlic and other vegetables. The basis of most of the dishes of Chile's home cooking is the production of local farms, in particular, vegetables and cereals. Corn porridge, a vegetable stew are popular here. Here a sea urchin soup, white wine soup and assorted seafood are exotic dishes. The tourists should draw special attention to the huge lobster dishes from the group of islands of Juan Fernandez. Instead of bread, local chefs use favorite tortillas. Chileans are fans of various kinds of desserts, including fruit. Fruit in general are widely used in the Chilean cuisine: people use them to prepare sweets, various jams and juices. As for drinks, Chileans prefer tea and "mate" which are usual for South American. As for strong drinks, Chileans prefer local liquor pisco, which is used as an independent drink, as well as an ingredient in cocktails, as well as local wines that are the same in taste to the best brands of Europe.
